Courgette and Tomato Soup

  • 1 x Teaspoon of butter
  • 2 x Onions
  • 3 x Courgettes
  • 1kg x tomatoes
  • 2 x Tablespoons of coconut flour
  • 1/2 teaspoon turmeric
  • 2L of chicken or vegetable stock and water

  1. Chop the onions and courgettes into small pieces
  2. Melt the butter and cook the onions and courgettes for 5 mins on a medium heat
  3. Chop the tomatoes
  4. Add the tomatoes and coconut flour, stir to make sure the flour doesn't clump
  5. Add the turmeric and stock and simmer covered for 20 mins
  6. Blend into a paste. Voila!
